Baingan ka Bharta

Baingan ka bharta ( बैंगन का भरता ) is a very popular dish which is liked by everyone in North India. For the people who doesn’t like to eat brinjal, this is a way to go. I spread baingan ka bharta on a chapati and make chapati roll for my son who is actually a brinjal-hater  but loves these chapati rolls 😀

Let’s see how to make it. (If you don’t want to use onion-garlic then simply omit them and follow the rest of the method as it is.)

baingan ka bharta Ingredients

roastedBainganEggplants (big brinjals)     2

*Roast the eggplants on Gas/Oven. Remove their skin and mash them.

Onion                 2 (chopped finely)

Tomato              2 (chopped finely)

Green chilli        2 (cut in small pieces)

Ginger                ½ inch piece(grated)

Garlic                 2 (grated)

Garam masala   ½ tsp

Salt                     as per taste

Oil                       2-3 Tbsp

Spice powders :

Asafetida          ¼ tsp

Cumin                1 tsp

Turmeric           1 tsp

Red chilli           1 tsp

Sugar                 1 tsp

Method

  1. Heat oil.
  2. Fry onions till translucent.
  3. Add green chilli + ginger + garlic.
  4. Add all spice powders.
  5. Sauté for a minute.
  6. Add tomatoes. (Fry till mushy)
  7. Add roasted and mashed eggplants.
  8. Fry for 2-3 minutes.
  9. Add salt and garam masala.
  10. Cook for one more minute.
  11. Garnish with coriander.
