Malai gravy

Malai gravy can be used in many recipes like Methi Matar Malai , Navratan Korma , Matar Mushroom , Kashmiri dum aloo etc.

*if you don’t want to use onion-garlic then simply omit them and follow the rest of the method as it is.
malai gravyIngredients

List 1 :

Ghee                    2 Tbsp

Malai (or Fresh cream) ½ cup

Milk                    ½ cup

Red chilli powder        ¼ tsp

Cumin powder             1 tsp

Black pepper powder  ¼ tsp

Cardamom powder      ¼ tsp

Sugar                           1 tsp

Garam masala              ½ tsp

Salt                     as per taste

List 2 : (Grind them together)

Onion                           2 big

Green chilli                 2-3 (depends on your taste)

Garlic                           5

Ginger                         ½ inch piece

Cashew nuts                10-12

Yoghurt (Curd)          2 Tbsp


Method :

  1. Heat ghee in a fry pan.
  2. Fry the grinded paste (List 2) on medium-low flame.
  3. When ghee separates from the paste, add all the spices from List 1 except salt.
  4. Fry for 1-2 minute.
  5. Add Milk and Malai/cream.
  6. Bring to boil.
  7. Check the consistency. (add little water if needed)
  8. Add salt and cook for 2 minutes.
  9. Malai gravy is ready!!

Notes :

If grinding raw onions make your malai gravy bitter then blench them before grinding. This means boil the onions(cut in small pieces) in ½ cup water for 2-3 minutes, drain the water and then grind the onions.
