Navratan korma is a mixed vegetable dish made in rich and thick gravy. It is very popular in North India but before we move on to the recipe I would like you to read my this post on ” Shahi Paneer ” to get a clear understanding about different gravies used in indian cooking. Potatoes 2 (half boiled, peeled and cut in cubes)
Peas ½ cup
Paneer 1 cup (Shallow fried)
Cabbage 1 cup
Carrot ½ cup
Cauliflower ¾ cup
French beans ½ cup
*You can omit/add any vegetable of your choice.
1. Chop carrot, cabbage, cauliflower, capsicum and beans in big pieces and stir fry them along with peas and potatoes in 2 Tbsp oil/ghee till they are nicely done.
2. Add Paneer and all the vegetables to Orange gravy and Enjoy Navratan korma but if you wish you can add them to any other gravy of your choice (White gravy / Green gravy/ Orange Gravy) to enjoy different varieties of Mix vegetables.
