Orange gravy

Orange gravy can be used in many recipes like Matar Paneer, Aloo Matar, Aloo Gobhi, Malai Kofta, Dum Aloo etc.

*If you don’t want to use onion-garlic then simply omit them and follow the rest of the method as it is.

Ingredients

List 1 :

Ghee                           2-3 Tbsp

Fresh cream (or Malai)     ½ cup

Cumin powder           1 tsp

Turmeric powder      1 tsp

Red chilli powder      1 tsp

Sugar                          1 tsp

Garam masala            ¾ tsp

Salt                              as per taste

Kasoori Methi   1 tsp (roast for 30 seconds on griddle) (optional)

List 2 :

Cinnamon powder    ½ tsp

Clove powder            ½ tsp

Cardamom powder   ¼ tsp

Onion                          1 big

Tomato                       2 big

Green chilli                 1

Garlic                          5

Ginger                         ½ inch piece

Cashew nuts                             10-15

Poppy seeds (Khus-Khus)      2 tbsp

⇐ Soak these two in

warm milk for 20 minutes.

Method :

  1. Grind everything together (except ‘List 1’)
  2. Heat ghee in a fry pan.
  3. Add the grinded paste.
  4. Add Sugar, Turmeric powder, Cumin powder, Red chilli powder.
  5. Fry on medium-low flame.
  6. When ghee separates from the paste, add Cream.
  7. Fry for 1-2 minute.
  8. Add 1 cup Water (check the consistency.)
  9. Bring to boil.
  10. Add Kasoori methi(optional), Salt and cook for 2 minutes.
  11. Orange gravy is ready!!

Notes :

If grinding raw onions make your orange gravy bitter then blench them before grinding. This means boil the onions(cut in small pieces) in ½ cup water for 2-3 minutes, drain the water and then grind the onions.
