Spinach ( palak ) gravy

Spinach gravy or palak gravy can be used in Palak Paneer, Palak Paneer kofta and also can be used as a gravy base for dum aloo , matar paneer etc.

*If you don’t want to use onion-garlic then simply omit them and follow the rest of the method as it is.

Onion        1 big (grated or chopped very finely)

Spinach     3 cup (Blench it and grind it)

Green chilli                3-4

Garlic                            4

Ginger        1/2 inch piece
Tomato                        1

 

⇐ Grind together.

Black pepper    ½ tsp (powdered)

Cardamom        ½ tsp (powdered)

Cumin powder 1 tsp

Sugar                 1 tsp

 

Mix these spice

powders together.

Corn flour         1 tsp (dissolved in ½ cup water)

Garam masala   1 tsp

Kasoori methi   1 tsp (roast on griddle for 30 seconds)

Cream                2 Tbsp

Ghee                  3 tbsp

Salt

Method :

  1. Heat ghee in a fry pan.
  2. Fry onion.
  3. Add mixed spice powder.
  4. Fry 3-4 minutes.
  5. Add tomato-garlic paste.
  6. When ghee starts to separate from the paste, add spinach paste.
  7. Add garam masala and Kasoori methi.
  8. cook for 1 minute.
  9. Add corn flour.
  10. Bring to boil.
  11. Check the consistency (add more water in needed)
  12. Add cream.
  13. Cook for 2-3 minutes.
  14. Add salt.
  15. Spinach gravy is ready!!
