White gravy

White gravy can be used in many recipes like Malai Kofta, Shahi Cauliflower, Pasta (you can mix cheese too in the gravy), Corn Curry (add shallow fried baby corns to the curry), Pineapple curry (add shallow fried pineapples to the curry) etc.

*If you don’t want to use onion-garlic then simply omit them and follow the rest of the method as it is.

List 1 :

Ghee                                      2 Tbsp

Fresh cream (or Malai)     3 Tbsp

Sugar                                     1 tsp

Salt                                         as per taste

List 2 :

Cinnamon powder    ½ tsp

Clove powder             ½ tsp

Cardamom powder   ¼ tsp

Onion                           2 big

Green chilli                 2-3 (depends on your taste)

Garlic                           5

Ginger                         ½ inch piece

Yoghurt (Curd)          2 Tbsp

Cashew nuts                               10-15

Poppy seeds (Khus-Khus)      2 tbsp

Sesame                         2 tsp(optional

⇐ Soak these three in

warm milk for 20 minutes.

Method :

  1. Grind everything together (except ‘List 1’)
  2. Heat ghee in a fry pan.
  3. Fry the grinded paste on medium-low flame.
  4. When ghee separates from the paste, add Sugar and Cream.
  5. Fry for 1-2 minute.
  6. Add 1 cup Water (check the consistency.)
  7. Bring to boil.
  8. Add salt and cook for 2 minutes.
  9. White gravy is ready!!

Notes :

If grinding raw onions make your white gravy bitter then blench them before grinding. This means boil the onions(cut in small pieces) in ½ cup water for 2-3 minutes, drain the water and then grind the onions.
