Anjeer BurfiAnjeer Barfi (Quick recipe)

Tip : In this anjeer barfi recipe you can replace anjeer with 1 cup desiccated coconut to make coconut barfi.

Ingredients : 

Condensed milk      1 can

Paneer (cottage cheese)   3/4 cup

Anjeer (Figs)           8

Almonds                  8

Saffron                     a pinch

Cardamom powder   1/2 tsp

Ghee                         1 tsp

Method :

  1. Wash and soak the anjeer (figs) in hot water for 10-15 minutes.
  2. Drain and Grind the figs. ( alternatively you can simply cut the figs into small pieces.)
  3. Cut the almonds in small pieces.
  4. In a microwave safe bowl combine Condensed milk, paneer and ghee.
  5. Microwave for 5 mins.
  6. Take out and mix well.
  7. Add figs, almonds, saffron cardamom to it.
  8. Microwave again for 3-4 minutes.
  9. Take out and mix well.
  10. Transfer in a greased tray and press down with greased spatula to even out the surface.
  11. Garnish with silver foil and chopped nuts.
  12. Let it cool.
  13. using knife, cut in squares or diamond shapes.
  14. Store anjeer barfi in air-tight container in the refrigerator.

Note : use butter paper or foil between layers else anjeer barfi can stick to each other.
