Take 11-12 Arvi Patra. wash them and Cut out their thick stems as shown below :
Now make Gram flour paste.
Mix all the ingredients listed below and make a thick paste using water.
- Gram Flour 3 tsp for each Patra
- Turmeric powder 1 tsp
- Red chilli powder 1 tsp
- Sugar 1 tsp
- Asafetida ½ tsp
Apply the paste on each leaf and put it on top of another leaf. use 3-4 leaves at a time. as shown above.
Roll all the 4 leaves together.↑
Likewise make rolls out of all the leaves. Steam the rolls for 15-20 minutes as shown above.
Take out the rolls. Let them cool down before cutting into rings.
Now heat 3 Tbsp oil in a wok. Splutter mustard seeds. Add the rings. Add Red chilli powder(1 tsp) , Cumin powder (1 tsp), Sugar (1.5 tsp) , Dry mango powder (1 tsp) and salt. Mix well. Fry for 1-2 minutes.
Arvi patra is ready!!
Sprinkle some chat masala on top. (optional)
